I logged my first day of MyFitnessPal with my cell phone and my computer. I actually did very well, I was happy to discover I took in 44 grams of protein, which is a conservative amount as far as the app is concerned, but thankfully you need around 45-55 if you're a woman according to vegan calculations so I did pretty decent. My fat intake was on target, as were carbs and sodium. I actually have a very low sugar, low sodium diet looking at my figures, so that is good. The app says that I could lose around 18 lbs or so in a month keeping that general caloric profile, which is great because I ate more than I would have thought I needed to hit my calorie goal. It is so much fun to see your stats laid out like that so you know where you need to improve. :-)
Mom and I went to the grocery store so I could load up on some things to cook with. I got a number of gluten-free foodstuffs, including rice pasta, brown rice flour, bagels, and breads. I don't normally use a ton of gluten-free breads and things since they are mostly refined grains and not very nutritious, but if the mood strikes to have, say, a piece of toast and peanut butter, then I don't have to use the bread with gluten and end up with a sore tummy. I also got a bunch of different stuff that I normally use, including about 50 different kinds of tofu (okay, three, but who's keeping track?) and some greens for smoothies.
I cooked a vegan meatloaf (called a Hippie Loaf) which is gluten-free and made from beans, quinoa and other yummy goodness. My parents actually really liked it and they are hard-core meat and dairy eaters. I went back for seconds and since a serving is only 190 calories, it didn't do too much damage. Tomorrow I am going to try making some vegan mac and cheese which I think is around 200-300 calories a serving. I also have additional pasta for baked ziti or whatever suits my fancy that I can use penne pasta in. I also have a ton of quinoa I want to use up.
As far as workouts, it was too cold to run again so I decided to get on the bike. I did intervals this time, where I went ~90 seconds at level 3 resistance, ~60 seconds at level 4, and ~30 seconds at level 5. My goal is eventually to run one of the courses that is preprogrammed into the bike. I wanted to try them before but I didn't know how to use the settings and didn't think I could do it. I am pleasantly surprised each day how I am improving.
