Most people spend Christmas eating to their heart's content. I spend my Christmas going running.
Granted, there was some pre-run debauchery before my evening run. My mother-in-law invited me out with my fiancé and her to Denny's, which I did manage to stay vegan, and had a skillet with potatoes, onions, green peppers, broccoli, and some cooked spinach. It was really good, though I can't for certain attest to the vegan-ness or gluten free-ness of it. :-) I hung out with them for a little while afterward, watching Christmas Vacation (I have kind of lost my enjoyment of it after seeing it so. many. times. when I was 12. I thought it was the coolest movie ever back then and must have watched several dozen times) and giving my fiancé's dog Daisy some good belly rubs.
I went on my run shortly afterward, after preparing the chia seed pudding for refrigeration. But more on that later. :-) It was actually quite pleasant during the run, it was getting dark though so I tried to just go the trail once (it takes me about an hour). I am not necessarily used to cold-weather running but I think I prefer running in 40 degree weather instead of 90, lol. Though there are good and bad to both: 40 degrees you don't have to worry about sweating profusely, but it gets dark more quickly and you have to be done earlier. 90 degree weather, well you'll sweat profusely BUT you'll have 10 or 12 hours in which to do it. So I think I prefer the 40 degree weather. :-) But man when I got done I was so. stinkin. sore! Like everything from the waist down was on fire and it hurt to move for at least a good hour afterward. I guess that means it worked? lol
I came home, and made myself a broccoli, hummus, and vegan cheddar wrap. It was very good, but gluten-free bread tends to start deteriorating from the moment it leaves the fridge. By the time I finished rolling it, it was already falling apart. But I got the chia seed pudding out and OMG, such gloriousness. :-)

Chia seed pudding before... and after! It was demolished with gratitude. Give my compliments to the chef, lol. Especially considering it took six hours to make and just gets better the longer it stays in the fridge. :-) But it was a lot of fun and I plan on making some more yumminess tomorrow. I may need some nutritional yeast, which I think I can just get from Dierberg's but I may have to run to Whole Foods later on after my run. :-) Yes, I'm attempting to do three days in a row, we'll see how I feel in the morning, lol.
