Yesterday was hectic. And by hectic, I mean an all-out, moving stuff around, getting stuff up several sets of stairs, and the occasional crash of my cat Frodo's all out war on whatever seemed attack-worthy at the time.
Since my dad is taking care of business overseas, my mom, sister, and I have been having some girl time and enjoying ourselves. Yesterday we had intended to go to Whole Foods Market so I could indulge in some vegan awesomeness, but sadly it was not to be. We ended up loading a bunch of Christmas presents upstairs, wrapping gifts and decorating them, and making labels. Needless to say, by the end of that awesomeness we were both sore and ready to rest for a little while, which turned into a long while, which turned into throwing together a late night snack rather than doing much of anything else. But Mom had promised that the next day we would go out.
True to form, we woke up the next morning and actually did what we set out to do. We started with going to the mall and taking care of some of our Christmas shopping. It ended up taking us quite awhile, so we stopped midway through shopping and had some lunch. We went to CPK and I had possibly the most amazing salad I had ever had in my life. And today, I discovered eggplant. Maybe this sounds silly, but I have never had eggplant. It is insanely good and has kind of the same flavor that chicken does. The salad also had artichoke hearts, which were pretty amazing as well. We continued our shopping at Michael's, where I bought some new jewelry-making supplies, and Nordstrom rack, where I gazed longingly at things and tried on a few shirts (I'm a women's large now in blouses, woohoo!) And then we went to Whole Foods Market and totally went to town. I have some ingredients for wraps (with gluten-free spinach tortillas!), chia seed pudding, smoothies, and potato pizzas. We will eventually get to making the corn chowder, but for now other activities have caught our attention. :-)
I have had a fun time getting to know my mom a little better, and since both of us have had dramatic improvements in our health it is much easier for the two of us to get along. It is so much easier when you don't have a multitude of symptoms from illnesses to get along with people! :-) I have noticed since I have gone gluten-free vegan that my moods have drastically improved. I don't feel so tense and angry like I used to. I am all happy, happy, joy, joy now and seem to enjoy everyone's company. Who would have thought it was that simple of a change? I thought I'd be screwed up for life. :-)
Tomorrow I will go to church and learn about fearfulness present in different characters in the Bible during the Christmas story, and how we can combat our own fear. Then I have finals this week and a number of different activities with different people. I even get to go to a vegan cheez-off later this week. :-)
